This week doesn’t include any new meals. The plan was to use up some of what was already in the freezer and prep a few meals to the freezer.
How did the meal plan work:
Overall, better. I am so out of practice with checking the meal plan and defrosting ingredients that many days were messed up simply because I forgot to defrost. In fact, I forgot to defrost the chicken strips for so long I forgot I was even trying to. I also forgot to defrost the rotisserie chicken for 4 weekdays.
Hopefully, this will not be a forever problem. If I use my planner well for the week, then I tend to defrost things pretty well but when I don’t use the one I don’t use the other. Problematic. Not everything takes so long to defrost but I have so much trouble with cooking chicken that I really do need the raw chicken to defrost all night.
- Monday: Steak was simple enough. The broccoli wasn’t great and the rice was okay.
- Tuesday: Was eat-out day, so that was easy
- Wednesday: Parmesan chicken – forgot to defrost until I forgot I was ever supposed to make this so it was another eat-out day.
- Thursday: Fried rice…I’m pretty sure it’s still in the freezer so I have no idea what happened to this plan
- Friday: Chicken pesto – I had no chicken. If I had made chicken parmesan I was going to put the extra chicken in this dish, but I’d forgotten. So this didn’t happen either.
- Saturday: No plan – should have made one. Instead, I ate out. Both meals.
- Sunday: All I’d planned was to use the ground chicken. This was not a thorough enough plan and I wound up being out with a migraine and didn’t make anything.
So, I didn’t follow the meal plan well enough at all. However, I did prep foods to the freezer for the next meal plans.
I have now prepped 5 servings of Beef and Noodle. The flavor wasn’t fantastic but it is totally edible this time – even good. I will probably add salt when I reheat it, as it was a little light on the salt.
There are also five servings of Chicken Lasagna prepped in the freezer now. I used the same recipe and instead of adding the inners to wraps, I made a second lasagna with it.
Then I made chicken pesto pasta that also has a leftover serving.
Review:
I’ve gotten myself completely out of order on this meal planning series. I didn’t label what week my first meal plan was for but I followed it poorly. I did eat at home much more after the grocery delivery but I never made a plan for that week. So it seems that my plan isn’t for the week that I had groceries delivered, which is likely because I took a week to finish ordering and getting the foods delivered. That delay made my plan almost worthless.
It seems that using a Monday-Sunday plan should work. The meals I prepped were not part of the plan due to that lag time. Yet the offset may have caused me too much confusion.
Truly, the biggest flaw is that I’m not used to checking my plan the night before and when I get home from work to start the process. There were many nights that I could have followed the plan or just exchanged days if I’d looked early enough to start.
Apparently, I need to try again and I need to make the plan today so I can get back on track. I’m definitely going to run out of some things and have to make another trip, but hopefully just for fruit and drinks.
